Michelin-star Chef Shaun Hergatt’s Caviar Bar is officially open. On December 3rd, Caviar Bar opened its doors and welcomed guests to its international caviar selection, fresh seafood dishes, and seasonal ingredients at Resorts World Las Vegas.
“I’m excited to enhance and support the Las Vegas culinary scene, and look forward to welcoming our guests,” said Executive Chef and Owner Shaun Hergatt. “Whether it’s a night out to celebrate a special occasion or a casual social outing, we have an experience for everyone.”
Celebrated designer Roman Vnoukov in collaboration with Chef Hergatt, translated the visuals of Caviar Bar with Russian influences throughout the restaurant. The sleek design features chic color schemes and bar area walls comprised of vibrant diamonds. Creating an intimate and luxurious atmosphere.
Chef Hergatt’s Caspy Caviar includes proprietary world-class selections of Kaluga, Golden Ostera, and Classic Sevruga, served with house-made blinis, crème fraiche, and chives. Choose to order a tin to start or incorporate the caviar into the rest of the menu.
Renowned for his technical cooking and artistic presentation, Hergatt’s menu brings a selection of house-cured meats. Such as premium Jamon Iberico, Culatello, and Prosciutto. Indulge in a selection of fine cheese: Brie, Jasper Hill Bayley Hazen Blue, Taleggio, and Comte Saint Antoine.
Try their savory bites which include hints of caviar. Savory Baby Waffles topped with smoked salmon, crème fraiche and caviar, Wagyu Beef with black olive and caviar and Shrimp Toast featuring caviar sauce.
For seafood lovers, try the Oysters with shallot and mignonette sauce, Gulf Shrimp Cocktail or Maine Lobster with lemon and Marie Rose sauce. Also on the menu is the Diver Scallop with caviar and a yuzu vinaigrette, Japanese Hamachi with shio kombu and satsuma and Bluefin Toro with ginger dressing, wasabi, and chive.
The large plates are also available like the Handmade Gnocchi with beurre monte, parmesan and chives, Atlantic Salmon featuring potato puree, Meyer lemon and pink peppercorn; and Australian Wagyu Beef served with miso-butter and Japanese mushrooms.
End your meal with one of their decadent desserts. The Tahitian Vanilla Bean Panna Cotta topped with raspberries, Dark Chocolate Cake with ganache and a gold leaf and the signature Caviar Ball with blackberry and sweet cheese.
