I am sitting at my counter top in my pajamas and it’s 6:30 a.m. It’s occured to me that I haven’t slept since exactly 24-hours ago because I’ve had the worst case of insomnia and damnit I feel like I can go for another 24-hours. I particularly excited about the day to start because there are soooo many new interviews to get done, meetings to cross-off my jam packed schedule, and places to eat for the first time like Eataly.
But right now my eyes are closing and the TV, which I never turn on, just hit that black hole of television where it shows reruns of 90s shows and infomercials like the razor for your chin hair and lip *orders two* and the Bullet. Suddenly, I’m craving the marinara sauce they made for the spaghetti and head to the kitchen to make my own pasta, so hold that.
I Cooked & It Was Bad
I’m back! And I made the American version of spaghetti and instantly regret it. It’s just that I can’t help but think how tasty and tangy the authentic Italian spaghettin from Eataly at Park MGM is probably going to taste like.
The city’s newest resort has been doing everything it can (and I mean everything) to make its presence known and it’s doing a great fucking job considering they signed only one of the biggest and most important pop-stars of the 21st-Century, Lady Gaga, for a residency.
I’m Sorry For What I Said When I Was Sleep Deprived
It was just a few months ago that Park MGM opened to the public and the media. (Which, by the way, I’m going to assume my invitation for a night-stay preview of Park MGM was lost in the mail…even though my peers received theirs. Sorry, but I don’t have a first-person experience to share with you for a recommended stay after you hit carb-coma at Eatlay, which I know you will. The menu is every foodies dream.)
The Menu
Eatlay is going to serve authentic Italian dishes like Neapolitan pizza and pastas to specialties. Plus, Italian street food and hand-pulled mozzarella and burrata cheese made in-house by Executive Chef Nicole Brisson.
To taste Eataly, you and ME are going to have to wait and not necessarily for an invitation that never arrived (okay so I’m a little salty LOL call it FOMO), but because it will not open until December 2018!
It’s A Promising Destination
The 40,000-square-foot culinary destination will be located directly on the Las Vegas Strip serving as the Park MGM‘s main entrance. It will be amongst other unique food counters, bars, cafes and dining experiences offering “traditional Italian food in a vibrant ambiance.” I’m not sure what means, but I’m allll here for it!

The Dessert
And I hear there’s going to be a wide variety of Italian desserts and sweets, including house-made gelatos and cannolis, which I also am now craving and badly enough to bake something up only this time I must exist the kitchen and get ready for my podcast meeting.
