I am a pancake lover and I definitely have a thing for a good pina colada, but having both fused together freaked me out a bit so I knew I had to try it and they were good!
Wednesday, July 10 is National Piña Colada Day and Cabo Wabo Cantina changed it up with Piña Colada Pancakes.
I know what you’re thinking, but read the next paragraphs.
I arrived about a half hour early and was seated within a matter of moments.
It wasn’t crowded or loud since everyone else decided (besides a few patrons inside, beating the hot sun) to sit outside.
My server Alberto brought out house baked banana nut bread that was lightly grilled to order served with whipped butter.
As for drinks, cocktails are breakfast food if you ask Cabo Wabo.
Their original “Paradise Punch” was made with Sammy’s Beach Bar Rum, Grand Marnier, orange juice, cranberry and passionfruit juice topped with sparkling wine.
I decided to also order the “Croissant French Toast” which was served with a fresh baked croissant warm maple syrup, fresh berries, powdered sugar, whipped cream, CW Eggs Benedict, served with poached eggs (had mine scrambled), English muffin, machaca (spiced pork) and chorizo, melted pepper jack cheese, hollandaise, along with the Cabo Wabo potatoes.
But first things first: l had to dig in into the warm stack of pancakes because they had arrived around ten minutes after ordering…along with everything else.
The pancakes were graciously topped with freshly toasted coconut shavings, sprinkled over pineapple wedges with a reduced pineapple syrup to pour on top.
Keyword: Reduced! So it wasn’t overly sweet or sticky. If anything, they were tasty, fluffy, and definitely filling.
They reminded me of an upside down cake.
I would definitely come back for another stack if they put them on the menu again sans National Piña Colada Day.
Starting Monday, July 8 through Friday, July 12 you can order yourself a stack. I think it’s worth mentioning that Cabo Wabo Cantina shouldn’t be pigeonholed to Cabo San Lucas, Mexico cuisine.
Their breakfast is actually pretty good. It’s a nice place to grab some breakfast because they open at 8am and the view is killer!
You can park your car at the Miracle Mile Shops because the restaurants is at Planet Hollywood.
